We pressured cooked our cooked chicken from yesterday, but sadly we’re not sure if it is any good. Sara forgot to refrigerate the chicken broth last night and we mistakenly added about a 1/3 cup to the canned chicken. The chicken pieces were in the freezer, but the broth stayed out all cooling to skim the fat. We realized this after we smelt the broth and it was already pressured. The chicken cooked for 75 minutes at 241 degrees, 82.7kPa, and 12 PSI but we’re still not sure if that would have cooked off the bacteria that could have formed after sitting out all night.
We are still heading east on a course 70 degrees true and a little over a hundred miles from Mokemo, averaging around 4.8 knots. We haven’t turned north because the wind is still fairly light around 10 knots apparent. We can tell the wind is on it’s way because the waves and swell are a little bigger. Wade is back on his crossword binge.
Cheers,
Wade and Sara
